Kale is kind of amazing. No, really. Stay with me here. Think about how delicious kale chips are, they're delicious right? Right! Kale is a serendipitous food, in that is so very good for you and yet, can be so very tasty.
Recently I learned about another delicious way to incorporate kale into my diet. Kale SMOOTHIES.
I can't take credit for the concept, that goes to Whole Foods. Backstory: I live in Austin (in case you didn't know), and here Whole Foods is a gigantic megabeast, complete with a dozen mini-restaurants and bars inside of it. One of those myriad bars is a green juice and smoothie bar, at which I spend a bit too much time and far too much money.
...and there my love of kale smoothies was born. Essentially any smoothie can be enhanced with some green. Much like my pockets.
This particularly smoothie came from, well, what I had in my refrigerator. Mixed berries, frozen bananas, apple juice, and... KALE. Not to mention that the combination of red & green looks like Christmas exploded in my glass. I'm down with that.
Mixed Berry Kale Smoothies
Makes 2 Smoothies
1/2 cup of apple juice
1/2 to 3/4 cup of frozen mixed berries (I used a combination of strawberries, blackberries, blueberries and raspberries)
1 frozen banana
2 cups of fresh kale
Blend it up!
